The problem with romance in Rome is the queue behind you. Everything worth seeing has four hundred other people seeing it, and the good restaurants are booked by people who booked in March.

The country outside the city is the opposite: terraces with nobody on them, a lake with the light going down the crater wall, a spa built round a Renaissance pool, an empty beach in September. It is also cheaper by a wide margin, which nobody minds.

The best shape for this day is one booking and no plan. A tasting at six on a terrace facing Rome, or a boat out to a cove in the afternoon, and then dinner wherever the town suggests. Somebody else driving turns it from a nice evening into a proper one.

The three shapes that work are a terrace, a boat and hot water, and each has its own hour. A terrace is the end of the afternoon, facing back at Rome from the Castelli ridge with the light going. A boat is the middle of the day, out to a cove on the southern coast that has no road down to it. Hot water is after dark, out of season, when there is steam on the surface and nobody in the pool.

One booking and no itinerary is the rule. The failure mode of a day like this is a schedule — two towns, a site, a restaurant reservation at eight — which turns an afternoon into a logistics exercise. Book the one thing that has to be booked and let the town decide the rest.

Several operators arrange things they do not advertise: a private table, a boat for two rather than twelve, a cellar visit outside the usual hours. It is a phone call rather than a booking form, and the number is on the card. If the day is an anniversary or something more, say so — it changes what they offer.

Then the driving, which is the unromantic half. An evening that involves wine, unlit country roads and a return into the city is exactly the case a driver is for, and split between two it is a smaller sum than a dinner in the centre. Nobody has to volunteer, and nobody watches the clock.
