In the pressing season the mill runs from first light until dark, and you can walk in and watch the oil come out of the machine.

How the day goes

  1. Down the old Cassia to Vetralla, with the medieval walls standing above the mill.
  2. Inside while the presses turn: the fruit going in at one end, the oil running out.
  3. The smell of new oil, which lasts about as long as the harvest does.
  4. The shop is there too, so a bottle of what you watched being made goes home.

In the pressing months you can turn up unannounced; the rest of the year ring first, because the floor is quiet and what is open is the shop.
