The Rio Maggiore runs in a green cut below Civita Castellana, with Faliscan road-cuttings still carved into the tufo. You walk down into it and climb back up to a dairy.

How the day goes

  1. Out from the farm and down into the gorge, on a ring that returns the other way.
  2. Past the Cavo degli Zucchi and the passages cut through the rock.
  3. Back at the dairy: primosale, stagionato, canestrato and ricotta, made where you are standing.

There is a real descent and a climb back out and the gorge floor stays damp, so it is a walk first and a tasting second.
