The barrel room is an Etruscan cave. Somebody cut it out of the tufa long before anyone around here aged wine in wood, and now the barrels sit in it at whatever temperature the rock decides.

How the day goes

  1. Up to Bardano, on the hills facing Orvieto, to a farmstead the Templars once held.
  2. Down among the barrels in the cave, where the air changes the moment you cross the door.
  3. Back up for the tasting, with a light lunch if you asked for it when you booked.

The cave stays cold whatever the month, so take something with sleeves down there.
