Roccantica

The herb beds at Roccantica are the working kind, cut from all season long. You go round them with a basket, hear what each plant was traditionally for, and then reduce the lot to salt.

How the day goes

  1. Into the beds, cutting what is ready and learning what it is used for.
  2. Back at the table with mortar and pestle, grinding leaves down into the salt.
  3. The table smells of what you cut, and the salt takes its colour from it.
