The Pontine plain was marsh until the nineteen-thirties, and what went onto it afterwards was water buffalo. The dairies here work to the clock — the milk that arrives in the morning is curd by mid-morning and mozzarella before lunch — and they will let you watch the whole sequence.
It is a working farm rather than a show, which is the point: you meet the herd first and eat afterwards.
